So im trying to open a case for a package that was never even shipped. The latest estimated delivery date was January 4th, 2020. It is now currently January 5th, 2020 and the site will not let me open a request. Whenever I select "my item hasn't arrived" it just says "your item may still be on the way, wait until estimated delivery date has passed" which it clearly says is 1/4/2020 and it is clearly 1/5/2020 right now.

Sellers should not be rude but how many times did you write your seller about the lack of updating before they called you a brat?
I suffer from debilitating anxiety and panic attacks too but when they happen, I resort to klonopin, playing guitar or crochet instead of getting into arguments with people.

Here is the thing with opened a case right now as you have done. If the item shows movement before the case can be escalated the seller can call eBay and have more time allowed for the item to be delivered before it can be escalated. If it ends up showing delivered you lose the case the feedback gets removed. It pays off for the buyer to be patient sometimes.
The buyer is justifiably upset. The seller accepted took $165 dollars and should have provided a stellar service.
In what regard does it pay off for the buyer to be patient? So the buyer does not lose the case? Since when does receiving an order mean losing the case? What kind of logic is that? Buyer receives the order and the case is closed. One might say that the buyer won the case if you are making it a sport event. The seller can call ebay ebay may or may not extend the time. The buyer can also call ebay and ask to close the case pointing out to horrible service (e.g. 1st class instead of priority mail)
Advice to the buyer. Don't panic. You opened the case, just follow ebay instructions. Do not communicate with the seller anymore. If you saw "money back guarantee"on your listing, you will get your money back. Based on your narrative, I have no sympathy for this seller whatsoever.

If it’s shows movement that’s eBay policy that the seller can have the case extended. The buyer can’t change that with showing the first class used. They can file a not as described return once they get it for it being late if they lose the case. My point with losing is the feedback is removed. It pays to Be patient if you want your feedback to stick. The buyer has 30 days from the estimated delivery to file

Your tracking reports on other shipments have absolutely nothing to do about the one you are concerned about.
Have shipped 1559 packages since Jan 20, 2010 all were delivered on or before estimated delivery times with the exception of a small handful (5 or less) and two were lost at different times in a USPS distribution facility in Jamaica, NY.
Tracking updates are not posted in real time - the tracking scans can and do take some time to be posted especially on the weekends - in general I see tracking updates usual posted after midnight in the time zone the package is in. If the package was shipped by ground it may take several days to see an update.
Patience is a virtue.

Have had tracking number that only showed I bought a shipping label and a delivery scan nothing in between (Priority Mail shipments). All were delivered withing 2-3 days.

That isn't reasonable because different hold ups can occur in different shipping systems, especially during the holiday season. Just because six items arrive on time doesn't mean the seventh will. This is very unfair to the seller.

If he really did say that, he's not very wise because it makes him sound like a fraudster (and the bad feedback was warranted).
That being said, look at it from the seller's point of view. Usually when buyers complain about shipping after the item has been mailed they are implicitly threatening to leave negative feedback if the seller doesn't reimburse them for at least the cost of shipping. He may have been "set off" because he thought he was about to be taken for a ride.
Also realize that it isn't hard to accidentally send something first class instead of priority if someone is juggling a lot of orders, though it isn't an excuse.
