I've been listing my magnets for years, but today, when trying to list a few more by hitting "sell similar" on my own listings, the USPS First Class Mail option disappeared! I've tried entering the weight and dimensions all kinds of different ways, but I can't get USPS First Class Mail to show up for my little envelopes! Has anyone else run into this? What am I suddenly doing wrong?

If you're looking for First Class package, USPS did away with it when they started Ground Advantage.
You should be able to select First Class Large Envelope, or something like that, but you can't buy shipping labels for it.

There is no 1st class package anymore. If more than 1/4" thick they bump you up into GA. First Class Large Envelope gives you more wiggle room weight wise, but is still under the thickness rule and any Rigid First Class Large Envelope is automatically sent as GA, according to my local PO clerk.
It is frustrating when the rigid mailer itself is 1/8".

I'm using regular 6 3/4 envelopes, not even business size ones! They're little, flat, and don't even come close to 3 ozs. But the USPS First Class mail option is just gone suddenly!

Since eBay does not sell USPS First Class postage for small letter size (#6 and #10) envelopes, it is not provided as a shipping option.
Just hand-address the envelope, and stick a Forever stamp on it.

Perhaps it's availability is now category specific (like ESE) for some reason? I list in trading cards and the option for both 1st cl letter and 1st cl large envelope are available. Of course, you can't print the postage and just use a stamp, but the option is there to show on the listing.
You can use one of the generic options like 'standard shipping' and note in the description that you'll be using a 1st class letter.

As noted by bdmh, if you can't get the First Class letter option to show up you can select flat-rate shipping with "Standard" shipping service, then enter the cost for a letter as your flat shipping cost.
I'm not aware of any category limitations on access to First Class letter as an option when setting up a listing. Have you double-checked the weight and dimensions that you've entered in the listing form?

It was an option up until 2 days ago, because that's what I used. I guess I just let all my listings expire and sell at craft shows. Sad...

Don't panic -- you can still list your items for sale on eBay, and continue to mail them out in a #6 plain white envelope with a Forever stamp.
As others have indicated, under your "Shipping" options, you can use "Standard Shipping," at your chosen price point.

Rethinking how to sell your items might be appropriate for more reasons than this.
You are selling at auction and most of your sales are on 1 bid.
Your are violating IP rights on at least 1 item.
The amount you are making on most of your sales hardly justifies your effort.
You might invest far less time and energy if you sell at the right crafts show, and make more.
