I ordered an item on Aug 9th and the shipping label was created on 10th that shows fedex tracking number. The item was supposed to be delivered by Aug 16 - Aug 19. I made sure the seller is from the US east coast, though from a different city, to get it on time as we are traveling next week.
I know sometimes there are delayed updates and contacted the seller 3 days ago to make sure they have shipped the item, but never got any response. Contacted fedex and they say they haven’t received the package.
so, the deadline for delivery has passed and the item is of no use if I get it during/after next week. I tried to report eBay but it says the item HAS been shipped when the tracking page clearly says only tracking label has been created, even though today’s date is 20th. How do I approach eBay to cancel my purchase?

24 hours after the last estimated delivery date you can open an "item not received" case. Before that date, the only response you'll get from eBay is that the item has been shipped, because they consider the issuance of the shipping label as proof that it's been shipped.
(personal observation - they would be better off considering the carriers acceptance scan as proof that an item has been shipped. Especially in those cases where the seller isn't charged for unused labels - like FedEx)

I suggest you open an item not received case. If there was some sort of delay you can work it out but otherwise you get your money back. Cooperate with the seller but don't listen to any of their excuses. Ebay is 100% safe and reliable.
USPS has weird delays with tracking. Fedex tracking they scan it every day.

I'm having a similar issue. I made a purchase on 1/09 funds cleared 1/12. Ok so I'll go from that date as seller wants to make sure funds clear before shipping. Created shipping label but never shipped. Messaged the seller, claims it was shipped but USPS has no record of picking up or receiving the package at any point. While I get MLK day today, is a postal holiday, the seller has had more than enough time to get the order to the post office or mail carrier. They have not at all. Hopefully I can get my money back since eBay allowed me to get scammed.

USPS does sometimes miss doing the acceptance scan. so you can't be certain that the item has not shipped. You have not been scammed; you are covered by eBay's buyer protection policy, which they call the "Money Back Guarantee." If the package hasn't arrived by the estimated delivery date, you can file a claim for 'Item not received."
I wouldn't bother communicating with the seller any more. If he hasn't shipped it, then he's not going to; and if he has shipped it, then there's nothing else he can do about it.

Sorry to hear that, unfortunately it’s happening a lot, lazy sellers are taking to eBay and us buyers have to take the gamble who is actually going to be honest and professional,I’ve Had the same thing happened,it’s a hit or miss, most my sellers are very honest but some are just lazy, had a seller create a shipping label only to wait almost a week to drop it off to the post office, unfortunately lots of sellers are taking to this lazy practice, some sellers argue their shipping methods but theirs no excuse for holding on to parcels, especially one that was payed for and payment process right away,it’s not that hard to take your lazy self to the post office once item it’s payed,it’s called being professional,eBay has changed for the bad, unfortunately, honesty and being professional is key but some sellers could care less, hope you got your money back

What eBay should do is not pay the seller until there is a delivery confirmation. Then sellers would expedite the items. I am a seller and always give to carrier same day the shipping label is created and I always get an eBay payout before the item is delivered.

Anyone notice the date of the original post, 08/20/21?

I have had the same experience with a Lazy Shipper.
How rude!
Not the way to run a business.
Shipping label created. At least I have tracking.
After 10 days, I finally asked the seller about my package.
I amazingly get a message that same day from USPS that they now have the package and it is in transit.
I understand things happen. You miss things or have nasty troubles.
No apology or ANY communication from the seller, which shows me they are just lazy and don't care.
They are newbies and are going to get a bad review.
Is this what ebay is coming to?

I am having the same issue. Shipping label created but seller never shipped in the last 7 days...USPS is awaiting item. Contacted the seller but tells it was drop off at the station. I told seller to go check with Post Office the status of my purchased items (I bought two different listings from him with several items listed as a "lot" in each listing) but it's not willing to make the trip. And told seller that in case he changed his mind and don't want to follow through with the transaction, then proceed to cancel the orders, but it's not willing to. I'll have to wait and hope he does ship both purchases or else wait to open an items not received case with eBay to be refunded.

That's because the seller creates a shipping label to meet ebays standards then takes their time shipping the item for either a dropship order or a retail arbitrage dropship.

Creating a label doesn't meet standards.
EBays standards are based on acceptance scan.
That requires handing over to the carrier.
So no providing a tracking doesn't meet eBays standards If it isn't scanned within the sellers handling time.
