I didn't see anybody posting about this, so I thought I'd share what I've been noticing for a couple of days.
The screen that appears after you buy your label on eBay shows your ship by date. My ship by date is different on that screen. Let me show you an example:
Of my 4 orders tonight, the first two orders showed the correct date. The third order showed Saturday, which is wrong. This last order, as you can see, shows Sunday.
I believe I first noticed this issue Tuesday night. As I was closing out of the screen to go to the next order, I thought I saw Fri, Aug 1 as the ship date for an item. I wasn't sure though, and the rest of the orders were all correct. I thought I may have looked at it wrong since my eyes barely caught it to start with. Tonight though, these dates are definitely messed up. The example is of an eBay Standard Envelope label, but my other package with the error tonight, and the one from last night, are Ground Advantage.
I know when I need to ship by and I would never go with these dates. My concern is someone new may think that date is correct, and I also wonder if buyers could be seeing incorrect handling times.
If anybody else has noticed this I'd appreciate you chiming in.

I first noticed this a couple days ago. I believe the date shown on the label page is when the label itself expires.
Maybe too many people were pre-printing and trying to send expired labels and they felt a "warning" was necessary. Of course they do it in a way that will be confusing to most sellers..

Since I see there are at least two with this issue, it most likely is a bug of some sort. I wouldn't panic, unless you plan to wait till Monday to ship, which hopefully you aren't.
