Yerterday I sold an item to a buyer in Canada, the buyer has a postal address registered on Paypal, nevertheless in the shipping center they told me that DHL can´t send packages to postal adresses, it has to be a physical address, so I can really ship the order to this address; the buyer told me that it is a gift to her cousin and she will provide me a physical address to ship directly the package to her cousin to another addres that would be not the same as the one that is registered on Paypal. I want to know if you can do this as a seller or if its better to cancel the order, and if I have to do that what steps I need to follow?

Only ship to the address on the Pay Pal transaction.
If you ship it to another address, they can claim they never got the package and you would have to refund them and they get to keep your item.
You can tell the them you can cancel the order, then they can reorder using the address they want it shipped to.

If you decide to cancel the order, choose problem with buyers address as the reason.

Buyers can select ANY ship-to address during checkout. Personally, I have 6 addresses and can add others at will.
Did you fail to tell potential buyers that you use DHL for international orders? That's your fault, and you should not blame the buyer for providing a normal PO box address. I suggest you simply forget DHL and use the postal system when a buyer (or other recipient) does not have a street address.
