Man,it seems I spend more time on this board lately then I do actually posting items.
So many issues and ticks lately
The latest (This morning) is when assigning shipping to a product using "Calculated Shipping", the only Flat Rate option is Large Priority Boxes...All Other Flat-Rate boxes are under the "Flat-Rate" service....and you have to place your own price into the field...
Is this a change from Ebay or a tick???
Did I miss the memo?

The listing form hasn't changed. There are many occasions when it makes sense to list both regular Priority Mail postage (based on weight and distance) plus the Medium FRB, so the buyer can choose whichever is cheaper to their location.
I just experimented with the listing form, and found that Med FRB didn't show up in the drop-down menu for "Services" IF I had selected "Large package" in the drop-down menu for "Package type". So if you change that to regular "Package (or thick envelope" then the option for Med FRB should show up for you.

Yes, all the flat rate mailers are the same price to every domestic address so you just put in the price. Nothing to be calculated.

Not sure why it isn't showing for you , I just did a draft & used calculated shipping and when Adding my shipping & it showed priority mail ( by weight ) as well as all flat rate sizes
small flat rate, medium & large boxes as well as envelopes
Are you still having this issue ?
I also add both weight based & flat rate because on some items a flat rate may be best for West Coast buyers and weight based better for someone closer

Just list Priority and ship whichever way works best, Flat or Zoned.

Ah, I see!. "Context Sensitive" selections....
I created a listing a couple of days ago, in this listing I selected package type=Large Package.
Then the following listing inherited that package type, thereby showing me only shipping options associated with it... Argh!, should have caught that.
