So, I ordered and item which arrived and is not in an ideal state. After contacting the seller, they kindly agreed to replace it if I return the item. They have told me they will send me a postage label so I can return it at no cost to myself, however, they have said that they now cannot do this because my eBay is not showing my email address. How can I amend this please?

your seller does not seem to know how to get your email address,if they are trying to send you a return label you should just hit the return button and make things a lot easier.Returns are usually best kept in the ebay system

As mentioned below, go to "My Purchases" and from the drop down menu click on Return this item and follow the instructions.
If you paid with Paypal, which is very likely, the seller received a notification from paypal and in the header of the email, there should be your email address.
I would also advise you NOT to provide any email or other contact information thru ebay messages, as ebay may penalize you by limiting you buying activities, closing your account etc , which could prevent you from completing the return.
