Hi all,
I was able to select multiple shipping options from which the buyers could choose what they wanted, but since eBay started showing the 'shipping policy', I can't. And I have to scroll through dozens of these 'policies' to find the one I want to offer with each listing. I'm sure it works well if one sells many of the same thing, but I don't. This really is a problem for me and I believe it has affected my sales. Any solutions? TIA

Either set up shipping policies that offer multiple services, or disable shipping policies and go back to what you're used to. Both ways will yield the same result - your ability to specify any shipping service you want.
" I'm sure it works well if one sells many of the same thing, but I don't. "
That's a common misconception. All that matters is the service you use. Doesn't matter if you have 1 listing or 1000 listings and whether those items are all the same or if every one will require a different size/weight package. For example, if you always offer the same service options: choice of USPS Ground Adv, Priority, UPS, etc - then you only need that one single policy to apply to all your listings. If you have listings that offer different services, create a policy for that - like a choice of Media Mail or Ground Adv. Or even a policy with just a single service. Set it up however you like, apply those policies to your active listings, then delete all the extra garbage that's auto-created when you opt in to biz policies.
----------
Business policies help me keep my sanity. Manage and edit them (or disable them to go back to how you used to set up your listings) on this page.
Once you set up your shipping policies and name them so you can easily identify them, you can go to your active listings and bulk edit to assign your new policies.
After the initial mess of policies that are created when you first sign up are no longer tied to active listings, you can delete them.
It takes a little time and work to set it up, but in my opinion it's well worth it.

have you renamed the policies?
If you rename them with the shipping types in the name, then you will see it in the dropdown.

As a buyer, I can tell you it I'd definitely affecting your sales. I'm mad about not getting the options. Now I will go to other buyers if it is showing cheaper, even though I may have wanted to buy from the first one I looked at. You and other sellers should raise heck. I don't appreciate them doing that, and it shouldn't be their place. It should be up to the seller and buyer!!!
