I have sold an item with an extended handling time and don't need to ship until Jan. 12. How can I ship it now without eBay's horrible system automatically changing the expected delivery date? I need to ship it USPS as it is a media item.

If it were me I'd take a different approach. What you are really trying to do is avoid an INR case, no?
You COULD try to monkey with or manipulate the eBay system to your advantage OR you could manage the expectations of your buyer. AKA provide good customer service.
What your could do is to ship it immediately (get an acceptance scan) and contact the buyer. Thank them for the purchase. Tell them that you shipped their item at XXX Date and YYYTime (from the receipt you get at USPS). Then report to them the system delays with USPS due to COVID and worker shortages, holiday volumes, etc. Pledge to keep an eye on the tracking and progress of their package and do it. If things get delayed you can start the Missing Mail process (2 steps) with the USPS and report those actions to the buyer.
If you want to be a "ship it & forget it" kind of seller in this current climate, INR cases will find you. Seems like the proactive sellers are having many fewer (if any) INR cases because they have communicated with their buyers.
This is just something you can do to help yourself rather than relying on eBay processes to 'do something."

I'm not you. I want a solution to this particular situation that doesn't rely on the largess of buyers. I want to use the handling time I specified to its maximal advantage. I don't want to be penalized for shipping earlier than I stated. I think all of that is reasonable.

You could… buy postage at the post office and get the shipping receipt/tracking.
Wait… until you see the package move through the system or wait ‘til Jan 13 to upload the tracking info.

As stated... mail just do Not upload tracking info. I've had good luck with media mail. It may arrive in normal delivery time. All my media packages have.

Or buy the postage cheaper online, like thru paypal, lowshiprate, or pirateship, and as said above, don't enter the tracking # in until close to when you need to ship it.
No harm in giving it to the buyer, though, to let them know you shipped.

I believe media mail is same price online or at post office. For this package it wont matter

People need to learn that the expected delivery date is completely wrong and way off, and that a seller is not responsible for the USPS/FedEx/UPS logistics. eBay should not even have that there. I've bought something from China and eBay said it would get here in 1.5 weeks.
