I have sold plenty of ipads the last year so my selling routine is not out of the norm. Ebay still decides to hold my money hostage even after 6 days of the item being delivered and positive feedback left saying my item is perfect. This is absurd. Ebay tells me I have to email them back with tracking proving I shipped the items when the tracking number is uploaded and already shows delivered days ago. They tell me I have to respond to the email but when I respond, I get an email back saying they don't accept emails. I call them and they say they can't help me and I have to respond to the email that just won't work. How am I supposed to get my $2000?

You're considered a new seller.
The item that sold for more then $1000, they'll probably hold the funds for 30 days.

If im considered a new seller then why did they pay me out 2 weeks ago for more than what I'm owed right now. This site is going to get away with stealing my money

For the occasional/infrequent seller, in eBay's eyes, that equates to same criteria as a "new" seller and therefore there are restrictions/limits & holds on funds. There are limits on the value of goods sold in any given month and there can be funds withheld until confirmation of delivery. eBay will notify you when the funds will be released.
In the meantime, it's the waiting game, so be patient and wait...

New seller, stock images, high-fraud electronics, low feedback score, several negatives received.
And you wonder why ebay uses caution?
You need to prove yourself and cancelling buyers' purchases doesn't instill confidence.
