I wanted to use one of those large 15in priority mail envelopes and place a box inside, was curious if anyone had issues with an item being too thick? The box isn’t huge, 10 inches in length by 2 inches in width.
Also on a separate question while I’m here, if I ship ground mail can I still pay to have someone sign for the item or is that only for priority mail?

Flat rate envelopes are supposed to close "within their normal folds."
I've shipped things thicker than 2" in them.
Sig conf can be added to any USPS service.
You may find Ground Advantage is less expensive than the Priority Flat Rate Legal Envelope if the package is eligible for cubic rates.
Enter package weight / dimensions into the eBay shipping calc for some estimates.

Keep in mind if you don't have the buyer's zip because you haven't listed yet, the calc can only provide estimates.

The legal size flat rate envelope and that big, flexible Tyvek envelope both are 15 inches long and both have no size restrictions. If it fits, it ships.
Signature Confirmation is available if you ship via Ground Advantage. But Signature Confirmation is required only for transactions over $750.

The only restriction that you may run into may be a misinformed postal employee that thinks because it is "flat rate" that it has to be flat.
Personally, if I am going to ship like that, I use the Priority "padded flat rate" envelope. (available online. not stocked at post offices)

Thanks for info. Yeah I prefer a delivery confirmation slip and they’re cheaper but anytime I send something over $50 in value I’m afraid I’ll get a message back saying “it never got here” or “I think it was stolen” but when they sign there’s no possible scam.

Wow, that's a huge waste of money. If a buyer files a claim for "Item not received," just regular delivery confirmation will protect you.
Delivery confirmation is free with all USPS package postage. Do you get a delivery confirmation "slip" because you're purchasing postage at the Post Office counter rather than through eBay? That's another unnecessary expense.

Are you aware both Ground Advantage and Priority Mail come with up to $100 included in the event of a lost package?
And, as said above, to win a non-receipt claim all you need is a delivery scan (or delivery attempt scan) to the buyer's address?
Sig conf is not only a big waste of money on anything under the required $750, it can also be a huge inconvenience for buyers. I hope you disclose clearly in your listings that you require sig conf on delivery.
