So I purchase an item in eBay like I usually do, and realized I bought it with the wrong address. After I noticed I requested to cancel almost immediately. I got no replies until this morning, telling me the they have already shipped my item and they have to wait until it returns to them to refund my money... Now I have to wait additional time simoky because the seller did not read their messages

It's very possible your seller simply didn't see your request to cancel before they shipped.
Also, depending on the seller's volume, it may have started to process immediately and stopping it may not be as simple as you think. That's why eBay can only let you request to cancel. They don't control the businesses operations.
However, I do think eBay should change the checkout layout. The Ship To address should be first before payment is even an option. That might stop a lot of these problems.

You're blaming the seller because of a problem you caused?

Do we know that it will be returned. Maybe the the folks at the address you used will be happy with the gift you sent them and keep it.

That's the way it's been working for me when I check out. I get the option to choose or enter a new address then I choose my payment method.

A return request is just a request, the seller doesn't have to accept it. They can decline, and Ebay gives them three days to make the decision.
Best to be very careful and sure when purchasing. Pretend there is no such option as a cancellation.
Many large companies with shipping departments can't accept a cancellation. The order goes into the system and is irretrievable.
With all due respect, please don't blame the seller when the issue started with your mistake.
