Just curious as to whether IRS cares about the amount it cost Sellers to obtain the items we sell since the money reported to IRS is not all profit?

They don't 'CARE' but you can use Schedule C and report all 'gross money received' and then deduct- at minimum:

 

Cost of Goods

Shipping Cost

Ebay Fees

Look at IRS Schedule C and its instructions to get an insight into how the IRS views this.

 

eBay reports the total amount that they processed for you, i.e., whatever the buyers paid for the item, shipping, and handling, and then you deduct all your expenses such as purchase price, postage, fees, packaging materials, etc.
