Most of my items are one of a kind. I may never be able to restock them .After it is sold the listing remains in my store. It is just a waste of time for me and those who visits my store

if you want to prevent your listings showing up from active lists after sold, you need to turn off "Multi-quantity listings" feature.
to turn off the feature, go to your "Selling preferences" in your account, then turn off "Listings stay active when you're out of stock." watch the screenshot photo down below...

What is the listing number? I do not see any out of stock message by looking randomly.

"Out of stock" items are not shown to anybody except the seller.

In your site preferences, you can turn off the "Out of stock" option. Unfortunately, there's no way to select which listings it will apply to: It's all or none. If you leave this option active, then you have to specifically end the listings for one-of-a-kind items.

I see my listings in the store after being sold, but only if one clicks on "Sold Items."

In this case, it has nothing to do with MQ or the OOS option. There have been a number of threads on this. It's just something new or glitch that eBay is doing. The messages started appearing a few days ago.
I do not sell MQ (except for a handful of listings), I have NEVER had the OOS option on b/c my items are all one-offs. I have confirmed that my OOS option is still OFF. Yet I am seeing these too, as are many other sellers.
The good news is that supposedly buyers are not seeing them, only the seller can see the message. The bad news is that it's appearing in multiple places. In fact, I went into an order to leave FB tonight & my normal link at the top to leave FB has been replaced with this OOS statement & it was a big hassle to leave FB. Very annoying since all my listings are quantity of 1, so as soon as they sell, they are out of stock.
No word from eBay that I've seen, if this is intentional or just the glitch-of-the-week.

Turn off the "out of stock" option in your seller preferences.
BTW When your item is out of stock, others can't see it. Only you can.
