@mv_supplements, I don't think that changing your listings from USD to Euro will help you fix this.
As @pjcdn2005 said, the listing currency is determined by which eBay site you create your listings on.
Your current listings were created on eBay USA www.ebay.com, so they are in USD. To list in GBP, you have to create the listings on eBay UK www.ebay.co.uk. In order for your listings to be in Euros, you have to create them on one of the eBay Europe sites, for example:
eBay Ireland www.ebay.ie (this uses the English language)
eBay Germany www.ebay.de (German language)
The listing currency determines what currency you are being paid in, but it will automatically be converted to your payout currency, no matter how your buyers pay. If you are currently receiving payouts in USD, then you will still receive payouts in USD no matter which eBay site you list on, and no matter what currency is shown on the listings.
I assume that you registered to sell on eBay USA www.ebay.com, because your items are listed on eBay USA, and you said that you are being paid in USD.
Unfortunately, as far as I know, there is no way to change your payout currency for sellers who registered on eBay USA, or on any of the other major eBay sites. (With the possible exception of eBay Canada; business sellers on eBay Canada can choose either USD or CAD at the beginning, but I don't think they can change this after they have made a choice and registered.)

Use an EU site.
Ireland is in English.
France, Germany and Spain are also eBay sites.
Your listings will show in Search if you give a shipping cost for that specific country. One of the choices is "all of Europe", which might mean no Switzerland or Norway since they are not in the EU, but I have sold to Norway so I don't foresee any problems.
If you are also shipping to the USA, an American Searching on eBay Ireland will see the price in USD. When they look at the actual item they will see the price in both euros and USD.
The currency exchange is handled by eBay and Managed Payments.
There is likely a "foreign currency transaction fee" but it is pretty much the same as most credit cards.

Your items listed on the US site so they will show in US dollars. The items you see in GBP were listed on the UK site and the ones on Euros were listed on an EU site. If you want your items sold in Euros you woukd have to list them on one of those sites.

IE site is a wrong strategy, I guess: it is hard to promote listings on this platform. I also have a strong feeling, ranking of listings from IE will be lower if compare with COM.
