Just had a guy win a 7 day auction, pay and then contact me not to ship and cancel the transaction.
It's not like he hit the wrong "BUY IT NOW". He bid more than once. What a waste of time. I already
had it packaged and ready to ship. That's why I never pre pay for shipping until I'm standing at the counter at the UPS store! I canceled it and messaged him not to bid on any of my future listings. Also put him on the blocked list. Anything else to do? Can't give a bad buyer bad feedback!

If you buy a shipping label through eBay, and don't use it (doesn't get scanned by carrier), you can get it refunded.

No one pays for shipping until after the person pays. No one even knows the address. When they are ready, after the person pays, they have no need to stand at a counter. They print from home.

According to the OP's first post, the auction winner did pay.

Canceled sales are at the bottom of the list of issues with Ebay. In the end you are only out the .30¢ transaction fee. Your recent auctions all had multiple bidders so you can send a second chance to the other bidders. And never go looking for problems by telling a buyer to not bid on future listings. Just quietly block them and move on.

Ebay gives buyers four days to pay. Eb sends the buyer an invoice when they win an auction or make a purchase, and a reminder email three days later, so you don't need to contact the buyer.
If payment has not been made after day four (so on day five), cancel the transaction for non-payment. This will give the buyer a non-payment strike and you will be free to relist. You can cancel here: https://www.ebay.com/help/selling/getting-paid/cancelling-transaction?id=4136
You can add the buyer to your block list if you wish: https://www.ebay.com/bmgt/BuyerBlock
Closing out unpaid cases gives the buyer a strike and two of those will block that buyer from bidding or buying from most sellers. If you haven't already, block buyers with two strikes in 12 months in your buyer requirements: https://www.ebay.com/bmgt/buyerrequirements This is the tightest restriction.
If a buyer gets X amount of strikes (Ebay won't say how many) they are limited to immediate pay listings only. They can't bid on auctions or make offers.

It's not just an issue with auctions. Buyers also request to cancel buy it now with
immediate payment required and all other forms of buying.
For every time there is a seller complaining about not being paid. At the same
time there are other sellers who have been paid receiving request to cancel.

I don't cancel anything until 7 to 9 days if buyer doesn't pay.
I do "item not paid" and relist it and block the buyer.
I am one of those who do not print address labels and I prefer to mail my stuff in person at the post office.
I buy my postage usually on eBay under retail which is cheaper than printing labels with postage.
I sometimes get better ideas and cheaper rates talking and working with the clerks at my post office in San Francisco. I am just a one-kid operation.

As others have said, cancelling was the right thing to do.
And do send out that Second Chance Offer.
But.
Since you had multiple bidders, you also established a market price for your item.
You probably should relist it as Fixed Price.
You could use the selling price as the asking, then add Best Offer to get the underbidders.
Or you could use Immediate Payment Required and the item will stay visible until someone actually pays.
Buyers on the whole don't like to wait seven days to be outbid by a last second sniper. That's why 85% of transactions are now Fixed Price.

Also, keep in mind that if you do not honor a customer's official request to cancel (that is, within the first hour and using eBay's formal cancellation option), you will not be able to cancel the transaction based on nonpayment. The option to cancel simply will never appear.
