I've been waiting a few days for payment on an item. I accepted the first offer within an hour or two of receiving it. It's been a while since I've sold here, but doesn't everyone pretty much pay immediately these days? I figured since it was the weekend, maybe he had stuff going on.
I am not in a hurry to get paid. My foremost goal is to get rid of stuff. I'd just as soon toss it in a dumpster but some of the things, I feel it would be a shame to turn into landfill.
Is there a reason someone with almost a thousand feedback points would make an offer and then just let it sit there after I accepted it and sent an invoice? Did I miss a step or do something wrong?
I don't want to be obnoxious about it but it could have been delivered by now.

Open a case for unpaid item now.

I send a message on day three, if they haven't paid by day four I open a UID. Buyers know they need to pay, no need to send constant reminders. In my experience the vast majority of buyers will pay in the first 48 hours.

You've already sent an invoice and (I assume) given him a day or two to notice it (I have to admit that as a buyer, I don't always notice right away when an offer of mine has been accepted, but an invoice is pretty clear). so if he's still dragging his feet, open the Unpaid Item dispute and see if that nudges him into action.
Putting it another way, you haven't missed a step here, so the UPI is next.

I may or may not send an invoice (since eBay already has), but on day 8 without payment eBay opens the UPI case and closes 4 days later if not paid by then. Too much else to do to bother with UPIs.

This is exactly what I do too. So far I've only had one person I had to open a UID on; everyone else either paid or asked to cancel.

I usually send a invoice on day 4 and open a case on day 7 if I haven't heard anything. I am more patient then some.

I too am not in a hurry to get paid, so I give my buyers three weeks to pay before I send a reminder.
95% of my buyers pay within a day, and 99% have paid within three days. I have no problem waiting a couple weeks for the other 1%.
I haven't had an unpaid item in at least a year.

Ebay sends a reminder at the 48hr mark. And the 96hr mark i believe. So I wouldn't send an invoice or a reminder, I would just file the UID.

No, most buyers no longer pay immediately. In fact, in some product categories---there is a very HIGH rate of of people who do not pay AT ALLl! You can reduce the number of nonpayers you will get stuck with in the future---by setting up the Block that Ebay provides to sellers. This block is based on the number of Strikes Ebay gives to those who do not pay.
To do this, click on Account. Then find Buyer Requirements. Set those requirements up to Block all buyers who have received Two or more Strikes for nonpayment in the past 12 months.

I send a reminder on Day 7. If no contact after 24 hours, then i open an Unpaid Item Dispute.

most buyers pay very quickly.
i don't even send an invoice unless a multiple items purchase.
i send an invoice "reminder" (well not really since i never sent one) after 2 or 3 days.
and i send another 1 after after another 2 days.
on day 8 i file an UPI or whatever it is called.

There are endless reasons why this high feedback buyer has not paid yet. lIlness, work emergency, family emergency---his computer went down and he has not been able to get if fixed yet----and so on, and so on.
