I have not received an email confirmation from EB that the buyer paid. But -- when I went to the hub, I saw that it sold and is waiting a purchased postage label.
Should I wait for the email confirmation before shipping?

The email is probably bogus and a scam. From your seller hub under tasks does it indicate the item has been paid for and ready to ship??

Check and make sure the payment is there and the item is in your paid waiting to be shipped, then ship it.

No. If it says Paid in Seller Hub it's ready to ship.
Email is not, IMO, a reliable way to be notified of sales. Most do all their business in the Hub. I click and you get an overview of everything and then from there take any action needed.

I am not sure if I am reading correctly, but never use email as a way to see if you should ship something. Always go to your selling page and/or messages on Ebay.

It is not all that unusual for email confirmations to either not show up or show up about 24 hours after the sale. It is a common minor glitch. If the sale shows up on the sold page in the seller hub you are good to ship.
