My sales are almost all buy it now. My listings have always gone up every week, on Sunday night. at 7:00.
Is it better to list all the items on the same night, or to put them up during the week as items sell?
Any suggestions are welcome.

Buyers like variety. Post as many as you can as soon as they are ready to be listing. Then just continue to add listings as you get more stock. Continuing to add new things help to promote repeat buyers. A good variety help promote buyers purchasing multiple items.
So if you have more listing ready to go, post them. Search for more stock, prepare the listings and post them when they are ready to go.
I try to have a few new listings every week or less if possible. You don't have to go crazy. Get the bulk of your listings posted, then try to add a few new things every week.

When we had statistics (Omniture), I found that over 50% of my buyers checked out my store/listings every 1-3 days, another chunk checked them out roughly every 5 days, the rest were random foot traffic. In order to keep my shoppers interested and engaged, I decided that I wanted to have new things for them to look at almost every day (every other day at the very least).
In the last year I've also found that if I stop listing for more than a few days, my sales start tailing off. If I list daily, I have sales daily - I'll have peaks and valleys like anyone else (particularly since my store isn't that big), but that's retail for you, anyway. If I slack on the listings, my sales go down.
I suffered a real slump when I was only listing once or twice a week through a bunch of this summer due to being out of town a lot - my sales are still recovering and my income took a real hit.
I'm all fixed price with immediate payment - no auctions (I rarely find anything anymore worth auctioning).

Try dividing them up so you list twice a week and see how it goes, if it seems a positive direction, try three times a week, etc. See what works. I sell a lot of clothing and am a niche seller so almost every day is better for me, but I believe in making gradual changes when it comes to business and assessing them over a period of time.

I list at any time, doesn't seem to matter. If there's a buyer to be had, they will find your item.
Going days without any new listings does seem to slow down sales.
