From your cell, in your saved seller list, hit edit, tap box next to their name, hit the trashcan icon top of page.

I guess eBay kind of listened, they have the saved sellers listed alphabetically again. And I for one do appreciate it. On a scale of 1 -10 though, I have to give them a 2 for their response.
