I'm kind of new to variations listings. I've only done 1 before and recently created another.
My questions is ... on a traditional buy it now/good till ended listing without variations, if i run out of stock, the listing ends and i lose all purchase history/stats (number sold). When i re-list the number sold starts at 0 again.
How about on a variations listing. Let's say i have 3 varitions of an item and i run out of one. The one variation that i'm out of will show 0 or "out of stock" but the others will remain and the listing will remain open. Is that correct? When that out of stock item is replenished, will i lose my "number sold" stats? Will it re-set to 0 or will it pick up where i left off?

Yes the listing will remain open if not all of the variations are out of stock. You do not lose your numbers sold stats until the whole listing has ended.

In order to retain sales history while you're out of stock you need to go to:
Account -- Site Preferences -- Selling Preferences
Select the box next to "use the out-of-stock option"

Correct. As long as one item is in stock, the listing will stay active.
No. As long as the listing is active, the sales history stays. You can replenish the OOS item and the sales history stays intact.
Like somebody else said, if you really want to keep the history and there is a chance that all variations may go OOS at the same time, use the Out of Stock Option.
Be aware that the OOS option is a global setting, it affects all of your current and future GTC listings. If you have listings that will not be replenished, the listings will have to be ended manually.
