Two days to create a posting so far

I am about to have a brain meltdown because I am try to add variations and have tried it every single way that Ebay, Youtube, and general logic suggests and I am still unable to creae variations for my items. Is Ebay trying to make it more difficult than it needs to be?  Any pointers towards a helpful resource?

@sho-case.md  Agreed.

Some things like variations and business policies are more complicated than they should be. I eventually figured out business polices by watching a few utube videos, but the process is clunky and not friendly to those who have little experience with computers. I feel your pain.

are you starting with a new listing? sell similar or adding to a existing listing will not work.

Since you have no items showing, you won't be able to use the best possible solution, which is "sell similar."

So you need to create a simple listing, and post it for sale on eBay.

Then, using your original listing, you can create a NEW listing,  using "sell similar" to add or delete variations on similar (though not identical) items.

Here's how you find the "sell similar" option --

Go to your "Listings" page (after you have actual created a listing, of course).

Next to the "Get shipping label" oval, is a circle with 3 dots inside.

Click on that, and scroll down to "Sell similar."

That will take you to a new screen to create a new listing, and you can make your changes on that screen, and create a new similar (though not identical) listing -- when you are ready to list your new item, make sure that you click on "List this item" at the bottom of the page.

Repeat all as necessary.

Variation listings are not supported on the app; use the website.

Variations are not supported on auction format listings; use fixed price format.

Variations are not supported on the simplified listing tool. If you're on the simplified tool you'll see a button on the top right that says "switch to business listing tool" - click on that.

By default the variation setting is hidden on the listing form. Once you unhide the setting it will stick for future listings. On the top right of the business listing tool, click the menu (3 vertical dots), select settings, and toggle the variations slider on (so it's blue).

Make sure you're creating a new listing and not using relist or sell similar from a listing without variations.

Beyond that it comes down to category; not every category supports variations.

If the category supports variations you'll find them in a non-intuitive, awkward placement on the listing form - below item specifics instead of above them. I recommend filling out variations before you enter any item specifics to avoid problems.

To add to @wastingtime101

Make sure you are using a Buy it Now option, not Auction.  And do not enable Offers.  Those two things will prevent you from being able to see the variation listing option.

I run a lot of variation listings myself, once you get the hang of them, they aren't bad. But its far easier to do with a PC vs the mobile app.
