Is there a place in paypal or ebay that shows everything that was paid for an item, all taxes and fees (for both ebay and paypal) taken out, and the cost for shipping?

You can find everything you need at the Seller Hub > Payments tab

Its harder to find on ebay since they dont want to show you but 90 days. Paypal will show you 3 years. Under reports on paypal, then all transactions. Its a balance summary that seems to show everything. Just enter the dates you want it to show you

Not under PayPal. PayPal knows nothing about eBay fees, and eBay knows nothing about PayPal fees.
Under Managed Payments, exporting my transaction detail gives me all the numbers I need. But in order for that to include the cost of shipping labels, I think the shipping labels must be bought through eBay AND paid for through managed payments (as opposed to PayPal).

My selling ID sells a very, very limited number of items (though her sales are nearing the new 1099-? minimum dollar amount, $600, for 2021) -- and she is a little obsessive.
She keeps track of all those numbers on her own, in a table created in Word.
Sometimes she sells things for an organization and shares the profits with them. For those items, she has a separate column where she lists the amount she forwards to the organization.
Obviously, this method will not work for everybody.
