@busyliz I think it totally depends on what you are selling and what you think the online buying patterns are for your select audience.
For instance, I sell predominately children's clothes and most of my buyers seem to be stay-at-home mothers and grandmothers. That said, I try to start my listings at a time that seems to work best: around 11:00 am est. That way it will come up high in a search for newly listeds and ending soonest when searched at that time.
However, when I list adult clothes or other things I try to list around 7:00 pm est.

While the time an item is listed may have a small influence on whether it sells, to say that it was "all about the timing" would be foolish.
IMHO items sell primarily because there are people here who want to buy them.
And those people are generally from all over the country (or the world), they all have different habits, and they all have different schedules.

If you are selling in the US, I have my auctions end on a Friday, Saturday or Sunday afternoon. Somewhere around the 3-4 pm central time. Allows for the east coast and west coast at a convenient time. Also, if an item sells on a Saturday, you have a free day on Sunday to set up the shipping and you can offer 1 day shipping.
