I have some assorted brands shirts listed and some show up in search results when I click on their specific size and some do not. I'd think that they would all show up under their brands as their size if that is what I have clicked on (e.g. - Mens Levi's Shirt, Medium). Does anyone have insight or information on why it is only showing size for some of the shirts in search results?

I'm glad you are patient as it took me all this time to get an answer. They revised the policy and took out all the don'ts or not allowed things. The policy currently reads as they want it to read.
I strongly suggested they change it back, but only time will tell.
No wonder so many buyers are complaining about variation listings. Sellers can do what they want with them. However I don't recommend that as it alienates buyers. It also can make your items hard to find.

I just sold a shirt about 2 days ago from a variation listing, but I do agree that buyers would probably find a singular listing a bit better. You can define the item specifics more.
In my experiences, I have realized that it's better to have a variation listing with sizes rather than colors. They really need to update the colors and have more extended variations on those.

For me, I don't put things into a variation listing if I can't describe each item completely by a single description with the exception of size, color or shape. If it is a different material or style, I do not put them in the same variation listing.
You are welcome to review my listings. I use variation listings for my beading stuff. Some have more options than others.

I absolutely agree with you. If it's a complexed description and can't be simplistic in the item specifics, then it goes into a singular listing.
I have looked at some of your items before. Your variations are in good order, in my opinion.
