How long do sellers wait before opening a case for non payment? Perhaps I expect everyone to be like me and pay right away.

I file an unpaid item dispute on day five. The vast majority of my buyers pay immediately if they BIN, or within hours when I accept an offer. A few pay the next day. Maybe a dozen a year pay on day two or three. I file and close two or three unpaid item disputes a year.

Yes Jonathan, it is auctions, to be honest I don't sell much but I find it annoying after 2 days still no payment and no message, it means extra trips to the post office if they do decide to pay.

If you run auctions, you are accepting that a relatively high percentage of winners will never pay.
Either they forgot they won, or they decide they bid too high, or they were 'thrill bidding', or they got tired of waiting and bought elsewhere. Who knows?
