I’ve been an eBay buyer for years but I’ve never sold anything. How would I receive the money ?

you need to go through the process if signing up for a sellers account. Once you do that you need to signup for MANAGED Payments.
You will NEED to give managed payment your bank account info and your SSN. The money flow goes from customer to "Ebay"/Ayden" to your bank account in about 3 days.
There is NO other option. SO if you are adverse to giving them your information do not bother. I have been on Managed payment for 1.5 years and it is seamless thus far.

The short answer is, eBay deposits the funds directly in your bank account.

Just sign up for Managed Payments. Yes, you will need to provide bank account and SS number number as you do with any financial institution. I have found that MP works smoothly. But as a new seller expect delays in payments reaching you until have a track record of selling without any issues with buyers. Also, as a new seller, do not list expensive items, especially highly scammed items. You can search this forum to see if the item you want to sell is a high scam item.
