When does title or ownership transfer to the seller upon a sale. Is it when the sale product is purchased (funds transfer) or when the product is delivered to the buyer?

I assume you mean transfer to the buyer, not to the seller?
Can you provide some context for your question?
If your question is regarding a shipping issue, the seller is responsible if the carrier lost or damaged the package.

Most items sold on eBay, except for motor vehicles, do not involve a title or transfer.

I would consider the item as belonging to the buyer once it's paid for, but it's still the seller's responsibility to ship it to them safely.

Once the funds are accepted it belongs to the buyer. Then it becomes up to the seller to make sure the buyer receives the item in order to keep the funds.

Years ago this was researched by me. At the time eBay operated under a California or Utah code, I forgot which one but it said ownership is upon delivery, not upon purchase.
Example, you pay for an item. If it's not in your possession after you pay then how would you force the seller to hand over "your" item? The seller can change their mind and hang onto "their" item and refund you. A court can't stop them from refunding and make them give you the item instead.

I want to add this, because I was thinking this type of situation supports it takes place upon successful delivery. The buyer can still reject the delivered item by returning it to the sender. If they accept and not reject or return it, then they accepted it in the condition it was received and therefore own it. It was a successful delivery.
What if it got lost in transit? Can the seller say it's your item, you own it, you figure out what happened to it? No you can't. The seller is responsible to deliver it to you.
