I have had several problems with relisting. EBay seems not to delete from the unsold section items that you already sold. So, I relist them but then I'm out of stock. I would like to know if something like this happened to you.
I'm frustrated.

If you want them to disappear entirely YOU have to do the manual work of deleting them after you've relisted them. It's always been that way.
They only "vanish" if you're using the "not relisted" drop down, but they're still in unsolds. Sell similars of course don't even vanish from the 'not relisted' drop down.
Sold items will still appear under "ended not relisted" as well.

I know but my point is: if they are already sold, they should disappear from the unsold section and only be in the sold section. Sometimes, I believe that certain item is still unsold because is in the unsold section so I relist it but then I'm out of stock.

My sold listings never appear in my unsolds, but then I rarely list any item with a quantity of more than one, and I have my unsolds set up for not yet relisted. Since I use sell similar rather than relist I do have to manually remove them from the unsolds after relisting.
If you are selling multiple quantity items or GTC listings - you do have to pay more attention to your inventory and relists.

There are a couple of caveats on that unsold page:
Also, an item I ended, the basket shows up.......I have to manually delete it to get it off the page.......
Don't know if any of those Status reasons apply to the problems you are having........

I think the reasoning might be that just because you sold something you may want to use the listing as a template for another similar item.
It's a weak reason.
I keep all my descriptions and my scans in folders on my desktop, because while my items (books) are basically unique, I do find other editions of some popular titles from time to time.
