I am going to be gone for a month, vacationing in a new state. I will be buying things there and can bring some things but cannot take my whole store with me. Is there a way to keep my store open and put all or some of the current items on hold or hide them, and just sell the new items I find in the new location, temporarily only?

There's no way to selectively implement the vacation setting (AKA Time Away).
You could just end the listings for the items you don't want to sell, then relist after your vacation. Or set up the site preference for the "Out of stock" option and then set the quantity available to zero temporarily.

No; vacation is all or nothing. You'll need to either end items that you are not taking with you or put entire store on vacation (stating over 30 days before something gets shipped with give you nothing but problems with buyers as some will not notice that 'notice' and expect reasonable shipping times).

you can put your store into vacation mode/Time away and either have the sales still go thru and you ship when you get back or you can have sales halted, no need to delete all your stuff like the other person mentioned. You can set up a automatic message as well. you cant just pick and choose which listings though. What you could do is just put in the time away and keep sales on and if someone buys something that you have brought with you then you can ship it and message them telling them your shipping it and they will get it sooner. The only thing with that is even the items you have with you will still show as time away. If you wanted them to not show that, then you would have to delete what your not bringing and relist when you get back. Keep in mind when you pick your return date, that you would have been gone a month so allow enough time when you get back to pack all the stuff.

You should put your store on vacation mode, especially since you are going to be gone for a long time. There is an option to still allow sales while you are away, which is your best bet. This way you don't have to drag anything along with you. Buyers will be notified that there will be a delay in shipping until you return. Set up an auto message too. That's just extra work for you to bring some with you, stop listings, etc. That's my 2 cents.

The posters who are recommending the use of Time Away have apparently not noticed that (1) you intend to be away for a month, (2) you asked how to "hold or hide" items rather than how to sell them with delayed shipping, and/or (3) they do not know that "If you allow item sales, your time away can be up to 15 days". It's not possible to set up Time Away, allowing sales, for 30 days. That's why eBay's Time Away options won't work for your situation.

IMHO it is reason able for eBay to put this limit on the setting, since very few buyers would have the patience to wait 30 days for their purchase to be shipped.

You could always change your settings to enable OOS "Out of Stock". This allows you to maintain listings at 0 quantity and keeps them "active" but hides them. The listing remains in your active listings, maintains all your selling data on it and maintains the watchers (unless they remove from watchlist of course).
So you could enable OOS, change all current listings to 0 qty or all those you want to "hide" and continue to list new items or those you want to remain visible.
