Hi,
I am new to selling on eBay. I am planning to expand my product range in the near future.
I would like to know what kind of items will be great for each season or month.

Since you are new, don't deviate with many categories. Just strictly stick into one category or maximum two. After choosing your main two categories, you can use any sub category coming under your main category.
A small tip:
Sell a unique product which others find it difficult to search.

As you will be offereing international sales, I don't really see how seasons apply - it is always going to be one of the four seasons somehwere in the world.

Sell what you know or have a passion about. List at a good price-people looking for value are not seasonal.

As I am new to eBay selling, First I am planning to sell my product for the specific regions only, like the USA, Canada, Europe. Then later I will expand my product range and shipping countries.

First and foremost, you need to make sure that your country will allow you to accept payments.

Depends of where you live.
We are in Cicidia season right now. Sell earplugs and rakes.
We just left tick season. Sell rubberbands and deet.
March/April is usually tornado season. Sell tarps and batteries.
Next week is college kids return to town season. Sell earplugs and t-shirts.
