So I ran across a bidder, who when I went to "check out," has no feedback visible at all! Fedback score in the thousands but clicking on it and I get this:
Private Feedback - This member, ABCDEFG, has decided to make his/her Feedback comments private. Feedback can still be left for this user and the Feedback ratings left are shown above in summary format. Learn more about private Feedback.
Guess it is not an option to me:

To sell on eBay, your feedback profile must be public.
So wondering what is up with that? Why would someone make their feedback profile private?

The way I understand it is, a buyer (bidder) doesn't have to allow anyone to see his feedback profile. Sometimes buyers don't want others to see what they purchase.
As a Seller (you) cannot have a private feedback profile.

The option has been around forever. It was more relevant back in the day when a buyer's feedback history revealed what they had purchased.
But even now, a snoopy family member can back-track to the seller's feedback to see the listing title that was associated with a comment that was left or received by a buyer. (You recently purchased vintage pinking shears.) So some buyers choose to hide their feedback comments, especially at this time of year when many purchases are gifts.
Sellers aren't allowed to set their feedback to private, because it is important for buyers to see the full background on a seller.

Most of the time it's to hide purchase history.
In select cases it's to hide FB left for others.

So would you sell to a buyer with private feedback?
BTW - I thought a seller could check a box which made the item's name and/or the name of the item private?
So to hide my purchases of pinking sheers, do I need to stop buying from sellers who do not make their listings private? Or email the sellers to update/change their listing?

Every single time. High numbers means the buyer buys quite a lot. I want them as my friend....lol.

Yes.
And if they win your listing, you have no choice anyway.
Private fb is not always to hide bad things.
Many people buy sensitive items they dont' want others to see.
Adult diapers, other embarassing or private things.
What other website let's the world see your purchase history?

What if their feedback was 10 or less?

Yes you can set up your listings to Private, and I see that you use that option.
But many potential buyers are suspicious about auctions that have private bidding. They suspect that the seller is hiding shill bidding. Which is why so many sellers won't use the Private setting for their listings.
The most effective way to hide your purchases is to set up a separate ID just for buying, and don't tell your family members and snoopy neighbors about it.

I wouldn't cancel a sale. That's would be a black mark on my record.

It's just more ebay **bleep** designed to give the buyer full control of the purchase. Sellers should AT THE VERY LEAST be able to look at feedback after a purchase has been made so we can attempt to see if we are dealing with a legit buyer or some scammer looking for free stuff!
Ebay needs to get it together! Without sellers ebay doesn't exist!
My 2 cents worth.....

If there were no buyers, though, sellers would not hang around just to keep listing and not selling.
Both are important.
