Your answer is in how you set up your variation listing. You chose to use your options to be, small, medium & large.
The other seller chose to set their variation listing up as men, women & children.
It is all in how you set up your listing. The other seller didn't do anything special. They just made different choices than you did when you set up your listing.

Yes I see you were able to revise or redesign your listing. As I stated in my post, it is all in how you had your variation listing originally set up. You were always in control of that.
