Multiple Dropdown Choices

I run several of my auctions with variations of the same product that my customers choose the style that they want.  I'm now trying to figure out how to add a second dropdown for my listings.  Once they pick the main item that they want, I am now going to offer an accessory item that has different colors to choose from.  I have seen other sellers running this type of listing but every time I try to add another attribute it erases the first attribute in the listing.

What am I missing?

I don't use variations so I can't really guide you. That said I have often heard the recommendation to find any listing that is set up like you want (multi-level) and use the Sell One Like This option. You can then see exactly how it was done and just modify it to suit your items.
