I have sold over 40 items the past three months and not once have buyers or potential buyers been able to magnify my items - what am I missing and/or doing wrong?

When you use Gallery Plus, an Enlarge icon will display right below your Gallery image on search results pages. A buyer can click or hover over the icon with their mouse, and a larger version of the picture will appear.
That feature isn't the same as having your pic to enlarge when a buyer clicks on it inside the listing. For that to happen, the pic has to be 800+ pics in one direction. And this option is free.

I assume you are talking about the photos at the top of your listing.
Zoom and supersize depend on the size of the original photo you upload to eBay. You do not pay for this feature - it is free.
If the longest side of your photo is:
It is possible to start with a photo that is large enough and crop it too small.
If your have used the "self-hosting" option through external listing software, and your externally-hosted photos failed to transfer to eBay hosting, then zoom will not be applied, even if your photos are large enough.

On Auctiva if I don't click a certain button my pics can be 10k pixels and they won't do the zoom thing.

That isn't an Ebay issue, that is an Auctiva issue. See the post just above yours for more detailed information.

That isn't an Ebay issue, that is an Auctiva issue.
Which is why I asked where he was creating the listings... I saw ship's answer, I also saw the OP state they used eBay. My reply was to you telling me where they created the listings didn't matter... I simply tried to explain to you that it does actually matter.
