I sold some shoes for $280. After two weeks, the person is saying the shoes are fake. I bought them off Nike, so I know they are real. He is asking for a refund, but I read from another thread that it is better to accept the return than to escalate to eBay to step in. What can I do so I can be protected from this scammer?

Do you have the receipt and proof you bought it from Nike? If so provide it and take it from there.

You'll will have to accept the return and refund when you get the shoes back. eBay will always side with the buyer in these types of cases. If he has filed a case, you need to respond within the allotted time. Otherwise eBay will step in and refund the buyer, and let him keep the shoes too. If you accept the return, you have a chance of getting the shoes back, hopefully in good condition. If the shoes arrive in bad condition, you may have a shot at giving a partial refund.
Never sell anything here that you can't afford to lose. I recommend selling things like this locally. You may not get as much but you will have cash in hand, no seller fees, and no returns. My daughter has good luck selling shoes, etc. locally on fb marketplace.

Let the buyer open a case then send him a prepaid return label and tell him you will refund when you get the shoes back.
If he returns a different pair of shoes:
report him to ebay for misuse of the MBG
report him to ic3.gov for internet fraud
report him to usps.gov for mail fraud
report him to your police dept. for fraud
report him to his police dept. for fraud.
All the above should be doable on-line.
Once you have all the above report numbers, contact ebay CS and request the case be closed in your favor.

Have them return the items, if not the items you sent and eBay finds for the purchaser: then file reports with law enforcement.
EBay is not law enforcement.
File a police report for theft either online or direct with your local police station
or by calling your local police.
Get a copy of the police report.
File a mail fraud report with USPS.
Get a copy if you can.
File an internet crime complaint - https://www.ic3.gov/default.aspx
Get a copy if you can.
Once you have copies of filed complaints and reports with associated numbers,
contact eBay via phone or email to appeal.

Unfortunately, ebay does not care about your receipt. Once the buyer claims FAKE, then it is FAKE as far as ebay is concerned, even if it is not. They don't care about any seller evidence.
Use the reporting features provided by the members here. I did that once and sent my "buyer" the case number and a link to one of those online reports to government agencies so he/she could be kept abreast of the situation.
I got a payment from the buyer forthwith.
