I will not be able to ship orders between Wednesday and Sunday. how do I place all my listings on Vacation mode? I use the mobile app, but can log onto a desktop if required to do so.
i can't seem to find any options in My ebay > Settings
i am just a new seller with some 60 odd items listed. I hope I don't have to end all listings and resist them on Saturday. Please advise.

Go to your active selling , left column click edit then top actions box, this will check all 71 of the items you have , then click edit all 71
Then click top left box with plus sign to select all your items, they will highlight blue, then click edit fields, from menu select handling time , change it and don't forget to save .
If you are doing 3 day then it won't work changing it today.
If something sold and you received payment today you would need to ship by Friday 1159PM PST .
If you bulk edit in the morning to 3 day then you have until Monday at 1159PM to ship

You can't set vacation mode unless you have a store.
Best thing to do is extend the handling time on all listings, you should be able to do it in bulk editing.

Bump
I still need to figure this out today. Please help.
i guess it I should not possible for an individual seller to place listings on Vacation mode. So, is there an alternative to ending all listings and resisting them later? If so, would they count as new listings, and hence not part of the free listings offered, requiring me to pay for my 70 odd listings?
how do I extend shipping time by bulk editing? If I will be back by Saturday, I guess I just have to have my handling time as 3 days, right? I will leave on Wednesday and be back by Saturday.

Bulk edit: Select all your listings on your active listings list. Then the edit button, then select handling time. From there make the changes. It will walk you right through what to do.
Vacation setting isn't available to you unless you have a store. Your choices are edit your handling time or end your listings and relist at a later date.
Let us know if you have any problems with doing the bulk edit.

In your section of Active listings (My eBay > Selling), check on the header box to edit everything, then on Edit.
