Is there a way to block certain sellers from seeing my listings? There's 3 in particular that keep copying what I list for sale, and then make it cheaper as well. It is so frustrating, I keep trying ti be one step ahead of them by listing something that surely no one else has for sale, 24-48 hours later, at least one of them is selling the same thing as me for 50c-$1 cheaper. Its driving me insane!!

There are only blocks for buyers. Go to seller hub and scroll down to Block Buyer List. You cannot block anyone from seeing your listing, only from purchasing from you.
However just because someone lists a similar item for $1.00 less than yours, that doesn't mean a buyer will automatically choose the other. Buyers also look for experienced sellers, which you seem to be one. So don't get caught up in something so small, it's probably not actually affecting you as much as you presume. lamber9347 is absolutely right. When I buy I look at feedback, EDA, and even how the listing is presented.
When I sell I sell at the price I want to get to make a comfortable margin of profit.
Also, other sellers, are probably not looking at your items. There are programs you can get that will scan to see what the market is getting for similar items. Then you set it to automatically change your price to go more or less and to what amounts.

No - because people do not even need to be logged in to see your listings on eBay.

I agree this is extremly irratating when I have a good idea but don't do it because this one guy will just copy my listing.

If you have a secondary selling account, list it on that one instead.
