how the hell am I supposed to stop ebay from relisting my items without my permission.

Go to your Active List.
Go to Search tab.
Put list in chronological order, About to Close first.
Choose the listings you don't wan to renew, and click on the box on the far left.
Go up to the Actions tab
Choose End and click.
All the chosen listings will go to your Unsold List for the next 90 days. If you decide to relist them during that time it is equally simple.
I've been using GTC since it became available, because it is less work than constantly renewing my (long tail/slow selling) items.
A minute or two every couple of days allows me to remove the listings that are over 16 months old (eBay puts a note on those) or have too many Views (a viewer is someone who did not buy, too many views means there is some problem with the listing).
As suggested it is a good idea to do this well before closing. I prefer four to 24 hours in advance, but YMMV.

It's the auctions I'm having a problem with. They think just because they perceive you as a noobi they can control our direction
I missed that you are a new seller.
At the upper right of the Simplified Sell Your Item form you were defaulted to, there is a link that takes you to the Advanced/Business form, which is simpler and more flexible.
Auctions on that form can be one-off and stay that way.
But.
The Simplified form also defaults you to the Auction format, which is down to less than 15% of transactions, most of which now also include Best Offer and Buy It Now, both of which expect and get higher prices.
Fixed Price allows you to set the selling price, demand Immediate Payment, and leave the listing up for 30 days before closing and relisting, which is much less work for the same money.
