How do I add variations of the same item?

Looking to make a similar listing to this. 

How do I list multiple variations like this listing on the Holo drop down? Do I need a store?

Only certain categories offer variations. You need to be listing in one of those categories.

No, you don't need a Store.

As noted in the other post, the variations option is not available in all categories and subcategories. There is a list, but it's notoriously incomplete:

You also must use the Advanced version of the eBay listing form (sometimes called the "Business tool"), not the quick simple version.  If the variations format is available, it will show up right below the option to add a second category:
