Hello,
I'm a new (outside of the US) seller, and I've been struggling lately calculating eBay fees and my costs, net profits etc...
I use a 3rd party website eBay calculation fee, and I put all my costs, eBay percentage etc.. However, I realized eBay doesn't calculate their fees on the item price, but they add the buyer's tax payment with the calculation as well!
How do I know the buyer's tax percentage before they purchase, so I add it to my calculations? I think it's impossible!! any one knows the best/accurate way to calculate my profits and fees?

Any fees added to unknown taxes is impossible to figure out. The only way to figure out exactly is to sell only to places that do not have any required taxes to be added to a sold item. Other than that, you can use an average to get near what your profits will be. Of course, many things like commodities and weather that change daily can change your costs. So, you would spend all your time calculating every conceivable financial change. An example: last year in the month of January utility bills were 175 bucks, but January this year was warmer, so the utility bill was only 135 bucks. That is just one variable example and there can be hundreds depending on what you sell and where you are located. Start with the basics that you know and can control. Best of luck and you already have a leg up since many people don't even think about if they are really making a profit or not.

It's so difficult to change since 90% of my sales are from the US. And, as you know, each state have it's own taxes. I will try and figure out the average and just add it up with the listing price, so it covers up any potential loss.

The average sales tax rate for US states is 6%, bu it ranges from zero to over 10%. Five of the 50 states have no sales tax.
