Just a heads up. I made a sale earlier this afternoon of a GTC item. YEAH! However, I just went to view my active items it was still showing as available and I had to cancel it manually. So be careful until they get all the bugs out.

That can happen if you have the "out of stock" OOS activated for GTC listings on your "site preferences".
Will show to the seller, but not seen by buyers.
If you click on it it will show "0" available.
If you are not using OOS, I have no answer.

There should be ZERO bugs. GTC listings are NOT new. They have been around for many years and the majority of listings prior to the March change are / were GTC.
Check your settings and make sure that you don't have the OOS setting checked off unless you want to use it.

No OOS which was why I was a bit startled!

Did you have more than 1 available in the listing?
Did the listing that was still active have a quantity available?

GTC listings have been used for more than a decade, there are no "bugs".
If the quantity was set to "1" and the listing did not end with upon a sale it's because you have the Out Of Stock option set to ON.
If you have multiples of the item it's a good thing because you can revise the quantity and the listing will go live again without needing to pay for a relist (or use up a freebie).
If you only sell single items you should turn the OOS off, if you have some multiples you'll have to think about it a little more because it's a global setting that affects all your Fixed Price listings.
Into your life it will creep

Unless you work for Ebay in the area that designs and fixes the changes that Ebay makes to the platform, you have no idea if there is a glitch or not. The OP may need to change something in their preferences, but they already said they had that set correctly. Ebay is KNOWN for being a glitch filled platform as they still do not test their changes before installing them and letting us be the guinea pigs. Ebay may have changed something when they made the GTC the only fixed price listing option or it might be user error, but again unless you are working for Ebay and in the loop for knowing everything that is not a correct answer nor response.

I too have been using GTC listings for a very long time. I have never had the form itself have glitches nor am I aware of any that have happened before or remember any threads that were on the subject. That isn't to say there has never been a problem, but I agree with Jimmy, it is highly unlikely that is the issue for the OP.
It is far more likely that this is a new format for the OP and there was a mistake or misunderstanding. The OP has not answered the question of if the listing had a multiple quantity on it yet. That would cause the listing to be still active.
In looking at the seller's recently sold items, there is only one since the GTC mandate started and it was for an AUCTION. If that auction relisted, then this isn't really about GTCs at all.

That has been part of the Quick listing form for months:
