Free returns/automated returns

Is the return process so automated now that I won't have a chance to "abandon" an item and issue a refund before a label might have been automatically issued and the item on its way back to me before I have a chance to make a choice?

Under certain circumstances yes, ebay will approve and send the return label before you ever know the request has been made.

The only way to prevent this is to not accept returns, set returns to Buyer Pays (and yes I know that SNAD doesn't follow this) or require an RMA number on all returns.
