So, just clicked on my store and all of the categories have disappeared. Cleared all of the cookies, signed out, looked at my store and what I have now is a "mess" of over 200 items each without a category. Anything like this happening to anyone else.

When I go to my store my categories are gone. However here's a temporary fix of sorts.
Go to Manage Store -> Marketing Tools. Under Store Header Features select the first radio button:
Store header and left-navigation category list (first 30 categories that contain items)
Now when you click on any of your listings you can see your categories and select them. Any buyer who clicks on one of your listings can see your store categories. I think everyone with a store should have this selected!

Worked like a charm although my links had a slightly different name than yours.
Went to Manage Store and then had to click "Listing Frame" to get me to the page where I could select
"Store header and left-navigation category list (first 30 categories that contain items)"
Side bar now shows all my categories on my eBay store page and then below that the eBay verbiage.
HOWEVER
My store categories ALSO now show up on the left side of each and every individual listing. It never did that before. I have made it a point to limit the width of my listings descriptions to make them mobile friendly (narrower screen). The side bar now throws that "sizing" off so I am not sure what will happen to mobile shoppers.

STOP THE PRESSES
So it worked as above for a few minutes. But now when I go to my store the categories are GONE again although they do still show up on each individual listing.
The whole idea of store categories on my eBay store page is that if someone is looking for, for example, a jigsaw puzzle they can scan through JUST THOSE and not have to plow through all my other listings. I have had many buyers buy multiple puzzles which, I believe, was a direct result of that search feature.
Now? Who knows.

I have NEVER as a buyer ...
Not true, but it is very rare that I actually use the silly store categories to peruse store items...
Sorry, but most sellers are not very good at organizing these and then it's different from one seller to the next so if they got rid of the store cats, good riddance.

Just looked at yours and they are showing up now, a little different to how they used to look, but the cat's are there.

Mine also. Under categories and had additional sub categories which are a must for customers to find the product they need. This new look is not good. When will it be fixed?
