I have 10 widgets for sale. Someone buys 1 of them. When does the count go down to 9?

A) When the purchase is made?

B) When the shipping label is created?

When the purchase is made the amount drops to 9 straight away.

It goes down when the buyer commits to buy.  They might not have paid yet but they did commit to buy.  If they committed to buy but did not pay yet it will show in your awaiting payment section.

As someone else said - when they commit to buy.

And ... if they happen not to pay, don't forget to adjust your quantity after you file & close the UPI
