One of the reasons people do it is because of eBay's tendency to inundate them with ads for similar items at lower prices the instant they commit to buy something. At least that's my take on it.

Totally agree - an anti seller idea that someone in the San Jose think tank dreamed up while doing a rendition of Timothy Leary's leisure time activities. If an item is sold - ya' stop advertising same or similar items.

There are dozens of reasons buyers do this. Every once in a great while, the reason is even valid. It's just part of doing business.
You may get some cancellations when buyers take a second look at the listings and note "FInal Sale. Seller does not accept returns" in your listing. Since all buyers know that they have eBay's Money Back Guarantee and will be refunded if they have a problem, despite your "Final sale" thing, they may think that you are either inexperienced as a seller, or will be difficult to deal with if a problem arises, or both. It's a policy statement you may care to re-think.
Otherwise, grit your teeth and carry on because cancellations are just an aggravation.

I like, "I didn't see that my toddler had got hold of my phone..." Right. And you were logged into your eBay account but laid the phone down on the coffee table at toddler neight, and the the little tyke was attracted to a picture of a set of flatware, and then just kept clicking on the agreement to purchase. 🙄
