My item will have lots of options to choose from, and I will have a gallery either on imgur.com or someone other place with a gallery that potential buyers can look at to see what the choices are.
Would I be able to insert a link to imgur in the item description?

No.
First, outside links are not allowed.

Second, "Choice" listings are not allowed ... that is not how eBay works.
(Click on "Read full policy" link- "Offering Choices"
If your items are variations (color, size, etc) of the same basic item, you can create a "Variation" listing.
If they are all different items, you need to list them singly. Each with their own listing. If you have multiples of the item, you can list Muli-quantity.

No, you cannot advertise your gallery outside of ebay as Ebay wants the money from those items you sell. You need your own website and advertising to do that.
