I just edited a bunch of listings in bulk to include 3 shipping options (media mail, first class and Priority). Previously, some only had Parcel Select and Priority, some had only media mail and Priority, etc.
When I look at the listing as a buyer, all I see is the media mail option. In other words, it looks like they are only offering the media mail option to buyers.
If I edit the individual listings, the 3 options do appear while in edit mode....

eBay has decided to hide shipping options that are more expensive if they are not also faster.
When a seller looks at their own listings, they see the shipping costs and times to ship to a buyer in their own ZIP Code. So of course Media Mail seems faster than it would for a farther buyer. So if I look at one of your DVD listings and put in my own east coast ZIP Code, or even one in Chicago, I see both Media Mail and Priority Mail. But if I put in the ZIP Code for Gurnee, I am only shown the Media Mail option. The screen shots below are both from the Journey Don't Stop Believin' DVD. In other words, most of your potential buyers ARE seeing the Priority Mil option as well as the Media Mail option.

I just put in a California zip code, and it doesn't show Priority....only media and first class...does THAT make sense? Why is Priority not showing for a buyer across the country?
And even in your screen shots, shouldn't the FIRST CLASS package option appear?

No, it doesn't. Especially since it showed MM and Priority when I plugged in the famous ZIP 90210. But it must be related to the costs and shipping times. If FC costs less than Priority and has the same estimated delivery window, then they'd show FC and not Priority.
This illustrates one of the problems with eBay's interference: Many buyers would be glad to pay an intermediate price for FC in order to get a shipping time that's slower than Priority but faster than MM. But eBay has chosen not to show it,.

there's a HUGE difference in timing between First Class and Priority Mail for packages going to CA, especially going through Chicago, which often holds first class packages up for days before outputting them to the next facility...ugh! Seems like ebay over-engineered this.
