Basic Store page format question

I am setting up a new store and can not find where to set the page format to the older style ... the new style format displays and in Selling Manager - Edit Store I can not find where to change to the older page front (pic below - edited).  Any help would be greatly appreciated.

Click "manage store". Click "edit store" at the top left. You will/should see this screenshot

PS...I don`t think there are any other optional layouts on the new store format.(at least I haven`t found any yet)

@hillbillymedia  Thanks for both replies ... I will check that out.  it would NOT surprise me that there are no longer options for the different store formats ...
