Taking a guess....
If you have issued an offer on an item during the past 4 days, certain fields on those listings are not changeable.
If at some point in the past if you issued an offer and the box was checked that states, "Send Automated Offer" then eBay is sending offers on that item automatically. Thus making certain fields not editable.
